Mini Braised Pork Belly Buns

Thinking of a new recipe to cook this Lunar New Year period? Fret not! We have Chef Jen with us today to share with us her newly invented dish that you will enjoy with your family and friends!

Before we get started, let’s have Chef Jen to share with us a little backstory of how this dish came about. Ever since young, her grandmother has always made braised pork for reunion dinner. It was one of her favourite dishes which she could eat a huge bowl of rice with. Reminiscing the flavour that she once had and being inspired by – “Kong Bak Pao”, she came out with this mini braised pork belly bun where she replaces the pao with fried Man Tou to recreate it to look like a burger. 

Now let’s get cooking!

Ingredients are for 4 servings

Braised Pork Belly Ingredients:

  • 400g Boneless skin-on pork belly
  • 50g Spring onion
  • 40g Old ginger with skin
  • 250g Chinese cooking wine (Hua Tiao Jiu)
  • 80g Light soy sauce
  • 20g Dark soy sauce
  • 60g Rock sugar

How to go about preparing the Braised Pork Belly:

Step 1: Blanch the pork belly in salt water for 2 minutes.

Step 2: Lay spring onions and ginger at the bottom of a pot with the pork belly skin facing down.

Step 3: Put the rest of the ingredients into the pot and braise it for 90 minutes at 150-degree Celsius in an oven with the lid covered.

Step 4: After 90 minutes, flip the pork belly around.

Step 5: Then continue to braise the pork belly for another 90 minutes.

And there you have it, the braised pork belly is done!

(Slice the pork belly into the desired size according to the Man Tou)

How to go about preparing the Sriracha Mayonnaise:

  • Lime zest (up to your own preference)
  • Lime juice (up to your own preference)
  • Mayonnaise
  • Sriracha chilli
  • Salt 
  • Pepper

(Mix all the ingredients together)

Other ingredients that you will need:

  • 4 Man Tou
  • Sliced Tomato
  • Roman lettuce

Before we start, remember to deep fry the Man Tou till it turns golden brown. When it is done, slice them into half.

Now let’s start putting together the bun!

Take 1 half of the Man Tou and spread it with sriracha mayonnaise. Next, layer it with the other ingredients.

Time to assemble!

Now it’s ready to be served!
